It's super easy to set up and runs fast even on a cheap server. I like how everything is just files - nearly every part of DokuWiki can be customized with a simple text editor. And since there is no database, making and restoring backups is trivial. My favorite plugins are [[plugin:mredirect]], [[plugin:scrapbook]], [[plugin:confmanager]], [[plugin:imagebox]] and [[plugin:numberof]]. [[plugin:mredirect]] is the most underrated plugin ever. I use it all the time. It's the only redirect plugin that's both easy to use and shows a "redirected from..." message like Wikipedia. [[plugin:scrapbook]] is also really useful for making simple copy-paste templates. It's not as powerful as WikiMedia templates, but it gets the job done most of the time. I want to make some custom plugins one day for my more complicated templates... I use a [[https://github.com/Alexander01998/dokuwiki_plugin_html5gif|modified version]] of the [[plugin:html5video]] plugin to display GIFs as looping WebM videos. This saves a ton of bandwidth and makes pages with GIFs load much faster. Sadly the original plugin no longer works and also doesn't support the kind of syntax that I need. I have also made small modifications to the default [[template:dokuwiki]] template, the [[plugin:translation]] plugin and the [[plugin:mredirect]] plugin.
