We use dokuwiki as an easy to use CMS. What I really liked was the absence of a "real database", all pages are plain txt files making it really simple to make a back up. Some parts of the wiki are editable for all users, some parts are closed.  It was also used for documenting and collaboration on a robotic sailing vessel for the [[http://www.microtransat.org/|microtransat]]. The participants lived in all corners of the Netherlands. [[http://www.xj3.nl/dokuwiki/doku.php?id=microtransat|Docuwiki]] helped great to get things done.
